Director of Digital Content This gazpacho recipe was given to me by my friends at Botanica in LA and it’s one of my all-time favorites!

easy gazpacho 

2 tomatoes 1 peach 1/2 cucumber  1/4 of a sweet onion 1/2 red bell pepper 2 cloves garlic juice of one lime splash of red wine vinegar olive oil, salt & pepper, to taste

Throw all of the ingredients into a blender and blend thoroughly. Garnish with a drizzle of homemade basil vinaigrette.
