This gazpacho recipe was given to me by my friends at Botanica in LA and it’s one of my all-time favorites!
1/4 of a sweet onion
1/2 red bell pepper
2 cloves garlic
juice of one lime
splash of red wine vinegar
olive oil, salt & pepper, to taste
Throw all of the ingredients into a blender and blend thoroughly. Garnish with a drizzle of homemade basil vinaigrette.

On a good day, I’m bringing a yummy tuna salad wrap. On a crazy run-around day , it’s to Pret a Manger for their salmon and quinoa salad!
I try to bring lunch every day, and when I do, it’s usually a roasted chicken sandwich on ciabatta with swiss cheese, avocado and honey mustard.

If I’m not ordering out, I usually bring in a bowl of this crock pot chicken taco chili.
